Sweet Spot – Something Different Cake Couture

There’s cake couture, and there is Something Different Cake Couture. Maureen Girard is a master cake stylist that specializes in edible works of art stemming from her background in painting and sculpting.

1. How did Something Different Cake Couture come to be?

Somewhat by accident. I met a Chef from Johnson & Wales Culinary school and she took an interest in my new interest in cake decorating. I told her I had an Art background (painting and sculpturing) and she thought I would enjoy seeing what could be done with cake and fondant icing. One thing led to another and from there I took classes from some very talented people and my business grew.

2. Do you only offer cakes or other desserts as well?

Mainly I offer cakes for ALL  occasions, not just weddings.  I also offer cupcakes, and decorated sugar cookies.

3. What is trending in cake design/dessert tables?

I’ll be honest, it depends on the client, what may be trending they don’t always gravitate towards. Drip cakes, marble fondant designs, geode designs have been trending since 2017 and have continued through 2018. I’m also seeing a lot of black and gold and painted on cakes! I don’t do a large number of dessert tables, but I do wedding cakes along with cupcakes and cookie combinations.

4. Do you have any signature flavors? 

Pink Champagne is the favorite!

5. Fondant vs. Buttercream… which do you favor? 

I prefer fondant (with butter cream is underneath!) because it’s such a versatile medium to work with, so much that you can do with it , on it. etc.

Gourmet Galley – Vendor Spotlight

Located just over the Rhode Island border in North Stonington, CT, Gourmet Galley is a certified green caterer specializing in weddings, corporate events, and non-profits. They have over 20 years in the business and have just recently become the Caterer of Choice for the Newport Preservation Society!

1. How did Gourmet Galley come to be? 

I got married in 1996 and hired Gourmet Galley to cater my wedding!  2 years later, the owner was catering my friends wedding that I was attending and approached me and asked if I wanted to buy her business!  She said to me, “I remember you as a bride, you were very into the food and the planning etc. and I’ve heard through the grape vine you are starting to cater on your own a bit…” True story.  That’s exactly how it happened.  As they say, the rest is history.

2. Are there any other services you provide besides catering?

We run a seasonal lunch cafe at the Florence Griswold Museum, called Cafe Flo.  It’s a full service, outdoor cafe with 40 seats.

3. Are you the exclusive caterer for any venues?

We are the exclusive caterer at: The Guilford Yacht Club, Guilford, The Meadows, Stonington, Priam Vineyards, Colchester.

4. What wedding food trends have you seen most in weddings this year?

Everyone is asking for locally sourced, sustainable menu items as well as vegan dishes.  We’ve had a lot of fun creating tasty vegan dishes for our clients. Brown liquor drinks featured at the bar are huge this year too.

5. Do you have any signature dishes or does the menu change seasonally? 

Our menus definitely change seasonally, but we really like to create dishes for our clients based on their likes too.  We have one station that we have fun with called a Star Bar.  Star Bars feature one ingredient in 5-6 different dishes.  So, corn for instance.  The station might have: crispy corn cakes with avocado salsa, creamy corn and poblano soup sippers, bacon and maple popcorn, corn muffins with smoke pork shoulder. etc. We’ve done them with tomatoes, avocados, and clams!  Its fun and the guests love it.

Cheers to Summer – Coveted Cocktail List

Summer is finally here! The 4th of the July is right around the corner and there’s no better way to quench your thirst than with these coveted cocktails crafted by Forks & Fingers!

First up is the Cotton Candy Cocktail. This lively libation will transport you back in time to summer days spent at your local carnival…

For Cotton Candy:

Dehydrated Aperol – dehydrated in food dehydrator for 48 hours on 125 degrees

Place dehydrated Aperol in food processor to create a powder

Use powder as sugar in cotton candy machine

For Cocktail:

2 oz Empress 1908 Original Indigo Gin

.5 oz Rich simple syrup

.5 oz Clarified lemon juice

2 oz Soda water

Next up is the Vodka Bees Knees – light and refreshing with a dash of zest!

2 oz Chopin vodka

.5 oz Lavender infused local honey

.5 oz Natalie’s fresh lemon juice

Shaken, double strained into a chilled coupe glass, fresh lemon zest garnish

Last up is a true summer classic… the Mint Julep! 

In a silver pewter cup combine:

1.5 oz Four Rose’s bourbon

.5 oz rich simple syrup

Fill pewter cup half way with crushed ice, Stir until cup is frosted. Add a final scoop of crushed ice. Garnish with a small bouquet of slightly crushed mint.
