Sweet Spot at Russell Morin’s Catering & Events

How sweet it is! Russell Morin Catering & Events is known for their innovative menus, but their desserts really take the cake! Emily Bridges, Bakery Manager and Exclusive Cake Designer at Morin’s graduated from Johnson & Wales University with a B.S in Food Service Management and a concentration in Pastry Arts. To kick start her career while still in college, she accepted a waitstaff position at Morin’s until her senior year when she was offered an internship in their bakery. Emily has now been part of the team full-time for five years!

1. What is trending in wedding cake design and flavors? 

Buttercream texture is always the most popular wedding cake design we do. They are simple, but when dressed up with fresh flowers it really brings the whole cake together. This year, more modern looking cakes are popping up everywhere such as fondant marbling and geometric shapes.

We added a few new wedding cake flavors to our tasting menu this season. Some of the new flavors include:

Crème Brulee- vanilla bean cake with a Bavarian cream filling and caramel sauce

Almond Biscotti- Almond cake with a coffee buttercream filling

Champagne Strawberry- champagne cake with a fresh strawberry buttercream filling

Although we do give a list to start the process of picking a cake flavor, we are always encouraging for our clients to come up with custom flavors that represent them as a couple!

2. Does Russell Morin Catering & Events have any signature desserts, cakes, etc?

For wedding cakes, our most popular cake flavor would have to be our lemon raspberry! It is a light lemon cake with a raspberry jam filling that is perfect for the summer months. Other very popular flavors are our cookies and cream cake and our sweet and simple which is a classic vanilla cake.

Our mini French pastry assortment is huge for weddings and cocktail parties! Some of the pastries included are mini eclairs, cream puffs, fruit tartlets, pecan diamonds, and a rich flourless chocolate cake to name a few.

3. Let’s talk dessert tables. What are some common and trending desserts included?

Along with our mini French pastry assortment, we have started offering an Italian mini pastry assortment. Some of the pastries included are mini zeppoles, mini cannolis, amaretto cream puffs, and coconut pine nut macaroons.

I would have to say the dessert that is huge right now is donuts! At Morin’s we offer a “donut wall” where you can hang a variety of donuts on for your guests. Also, French macarons will always be huge, but we offer custom colors and flavors to coordinate with any wedding.

4. Fondant vs buttercream? 

Buttercream! You can never go wrong with a buttercream cake, especially in the summer. Most of the wedding cakes we design at Morin’s are 100% buttercream, although there are some cake designs that need to be executed in fondant. If your cake design needs to be in fondant I always add a healthy layer of buttercream underneath, so it will still be just as tasty!

5. Do any of the desserts have custom drink pairings?

At the end of the night at weddings, we do offer a coffee milk frappe that is paired with a house-made mini powdered donut. We also offer passed dessert cocktails such as an adult root beer float and a mini Boston cream martini!
